Triple Berry Cream Cheese Cake
Cake
• 1 cup -2 tablespoons all-purpose flour
• 2 tablespoons cornstarch
• 1/4 teaspoon salt
• 1 teaspoon baking powder
• 1/4 cup butter
• 1/2 cup sugar
• 1 egg
• 1/2 teaspoon vanilla
• 1/2 cup cream cheese
• 1 1/2 cup berries plus sugar if needed
Cream Cheese Topping
• 6 oz cream cheese
• 3 tablespoons sugar
• 1 teaspoon vanilla
• 1 teaspoon cornstarch
Glaze
• 3/4 cup powdered sugar
• 2 teaspoons milk
First mix all of the dry ingredients in a large bowl add 1 cup of flour, take out 2
tablespoons of flour add in 2 tablespoons of cornstarch then add baking powder,
and salt whisk together and sift 2 times. In A mixing bowl, whisk together the egg
and granulated sugar until combined. Whisk in cream cheese, butter, and vanilla
extract. Add dry ingredients into wet ingredients and mix everything together.
Carefully fold in the berries. To make the cream cheese filling, mix cream
cheese, sugar, corn starch, and vanilla just to combine. Carefully spread on top.
Bake at 300 degrees for 20 minutes turning halfway. Let it cool 10 minutes.
Meanwhile, prepare the glaze. Stir powdered sugar with milk. Add to the top and
bake 23 more minutes turning halfway through. (Your baking time may vary
depending on the appliance you are using) Let it cool and enjoy!
